This is an easy and delicious meal you can make ahead and come home to on a busy day. We use it as a burrito filling and sometimes as a side with scrambled eggs in the morning.
- Combine all ingredients in a stock pot or crock pot.
- Slow cook on medium-low heat for an hour. Remove chunks of onion and pepper just before serving.
- Serve with warm tortillas, chopped green onions, chopped cilantro, shredded cheese and sour cream.
