Giant Ginger Cookies

Ingredients
  • 4 1/2 cup flour (all white wheat, or half and half)
  • 4 tsp ginger powder
  • 1 1/2 tsp cinnamon powder
  • 2 tsp baking soda
  • 1 tsp ground cloves
  • 1/2 tsp sea salt
  • 1 1/2 cup soft butter
  • 1 1/2 cup brown sugar
  • 1/2 cup molasses
  • 2 eggs
  • 1/2 cup raw cane sugar, coarse
Instructions
  1. Preheat oven to 350 degrees.
  2. In a bowl or mixer beat the sugar, butter, molasses and eggs together.
  3. Add the dry ingredients to the sugar-butter mix. Beat until all ingredients are well blended.
  4. Form golf-ball sized dough balls. Roll one side in raw cane sugar and place sugar-side-up on a cookie sheet and lightly press down. Leave a couple of inches between cookies.
  5. Bake for 10 -12 minutes, or until done. I look for slight cracks on the surface to know they are done, since visually seeing the cookies "brown" is not possible. Cool on the tray for about 5 minutes, then remove to a cool, flat surface. Enjoy!
